Four different culture blends on homemade baguette. It was a very serious (but very fun) tasting table. Same base recipe with different vibes. All were creamy, some were punchy, some were… “ambit
Today was a great testing session 🧀 🥖 Four different culture blends on homemade baguette. It was a very serious (but very fun) tasting table. Same base recipe with different vibes. All were creamy, some were punchy, some were… “ambitious” 😅 Forever taking notes in my trusty notebook that’s slowly turning into a chaotic little bible of recipes and product development. This one will be The Creamie when it’s ready and honestly, it’s getting close. Sadly it won’t be ready in time for our upcoming market, but that just means we get to keep tweaking until it’s exactly right. Worth the wait, promise. We’ve got one truffle Camembert aka Trufflebert, plus two blues. Both Moon variants. One made with our standard mix, the other featuring mold from a rind I stole from a cheese we fell in love with in France and smuggled home to try and recreate. Today we got a new toy 🧀💨 We’re vacuum sealing one of our blues to see how it holds up in the coming weeks. We’re going to be checking the flavour, texture, preservation. It’s also the start of our shipping trials.
